Kaju Masala

काजू मसाला 

Ingredients: -

  • Cashew Nuts- 150 grams (Soaked)

  • Cashew Nuts- 7/8

  • Onions- 2

  • Tomato paste - 2/3 tomatoes

  • Garlic – 6/7

  • Ginger- 1 inch

  • Poppy seeds/ khaskhas – 20 gms

  • Coconut malai- 1 coconut

  • Coriander- ½ cup finly chopped

  • Coriander powder- 1 spoon

  • Cumin powder- 1 table spoon

  • Garam masala- 1 ½

  • Kitchen king masala- 1 spoon

  • Kashmiri chillies- 6/7

  • Kasuri methi

  • Cream

 

Method-

  1. Soak cashew nuts in a hot water.

  2. Make paste of 2/3 tomatoes in a mixer and keep it aside.

  3. Put a kadai on a gas to heat on low flame.

  4. Put little oil in it.

  5. Cut 2 onions and fry it in a kadai.

  6. Grind onions, coconut malai, Kashmiri chillies, ginger, garlic, coriander, and 7/8 cashew nuts in a mixer.

  7. Take another wok or vessel.

  8. Put 2 table spoon oil in it for tempering.

  9. Add cumin seeds, then add the grinded mixture.

  10. Fry well till it leaves oil.

  11. Then add coriander powder, cumin powder, tomato paste and fry well.

  12. Allow the mixture to simmer on a medium heat for two minutes.

  13. Once this curry mixture is nicely fried, the add soaked cashew nuts in it.

  14. Boil little water in another vessel.

  15. Once cashew nuts are fried, pour hot water in a mixture.

  16. Adjust gravy thickness as per your taste.

  17. Stir well and bring it to boil.

  18. In a boiling curry add ktchen king spice and garam masala.

  19. Take kasuri methi, rub it gently on palms and once you see the gravy boiling, add it in the curry.

  20. Let it cook for 5 minuts and then switch off the gas flame.

  21. After 5 minuts add crème in a curry.

  22. Garnish with coriander leaves.

  23. Spice cashew nuts curry is ready to serve.

  24. Enjoy this dish with chapatti, paratha, nan or also with pulawa, plain rice or Jeera rice.
