Chole Bhature

Chole Bhature/छोले बटोरे

Ingredients: -

  • Kabuli chana- 2 bowls  (soak it overnight)

  • Soda bicarbonate- ½ spoon

  • Oil- ½ bowl

  • Onions- 4

  • Tomatoes- 4

  • Garlic – 5/6

  • Ginger- 1 Inch

  • Cinnamon - 1 piece Clove- 4

  • Cardamom – 2/3

  • Coriander powder- ¾ spoon

  • Cumin seeds-  1 spoon

  • Kashmiri lal mirch- 5

  • Fresh green coriander- ½ bowl finely chopped

  • Turmeric powder

  • Salt

  • Kasuri Methi

Method: -

  1. Put soaked Kabuli chana in a cooker

  2. Add salt and enough quantity of water that will soak chana and pressure cook it till 4/5 whistles.

  3. Then put it on a sieve to remove excess water.

  4. In a wok heat 1 spoon oil and fry onions.

  5. Make tomato puree in a grinder and keep it separately.

  6. Put fried onion, ginger, garlic, dry chillies, cumin seeds in a mixer and grind well.

  7. Heat the wok, add oil and fry this mixture well till it leaves oil.

  8. Add tomato puree and fry well.

  9. Add cooked chana, salt, coriander powder.

  10. Rub kasurin methi on palm and add to the curry.

  11. Bring it to boil, then add coriander.

  12. Your spicy tasty chole is ready to serve.

Bhatoore

Type 1 

Ingredients: -

  • All- purpose flour- 3 cups

  • Salt- ½ spoon

  • Curd- 1 ½ cup

  • Oil to fry

Method: -

  1. Mix all purpose flour, salt and curd and make dough.

  2. Keep it covered for 4 to 5 hours.

  3. While making dough don’t make it too soft as after 4/5 hours it will automatically become soft and spongy.

  4. Make small balls of the dough.

  5. Roll big thick purees of the dough

  6. Deep fry this purees.

  7. As we don’t add soda bicarbonate in it, these bhatoore don’t get oily.

  8. These bhatoore tastes nice with Chole, duma loo or any vegetable curry.

Type - 2

Ingredients: -

  • All purpose flour- 4 cups

  • Oil- ¾ cup

  • Baking powder- ½ tea spoon

  • Salt- ½ spoon

  • Oil- to fry

  • Milk- 1 cup

Method: -

  1. It’s an instant recipe for making bhatoore.

  2. Sieve all-purpose flour, salt, baking powder.

  3. Add oil, milk and water as required to knead it well.

  4. Make small balls and roll thick, big bhatoore.

  5. Deep fry in oil.

  6. Tastes nice with any gravy, simple and quick recipe to cook.
